Description
This simple cinnamon apple coffee cake without sour cream will become your new guilty pleasure. The recipe has the correct balance between the sweetness of the cake and the acidity of the apples.

- 2 1/2 cup of flour
- 1 cup brown sugar
- 3/4 cup of sugar
- 2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3/4 cup of unsalted butter, cool and diced.
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup evaporated milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup of pecans, chopped
- 3 apples, diced
Instructions
- Preheat the oven at 180°C in a regular oven or 170°C in a convection oven. Prepare a rectangular baking pan spraying some baking oil over it.
- Coarse meal: Mix the flour, brown sugar, sugar, 1 teaspoon of cinnamon, salt and butter in a bowl with your hands. You have to mix the butter and flour into your palms until you achieve a coarse meal texture. If you want to skip this process, you can do it in your food processor until you reach the same consistency. You need to reserve 3/4 of a cup of this mixture.
- Mixture: with the remaining coarse meal mixture, add the baking powder, baking soda, evaporated milk, eggs and vanilla. Beat it with an electric mixer for two minutes until you have a homogeneous consistency. Pour the mixture over the baking tray.
- Crumble: Mix the 3/4 cups of coarse meal mixture with the remaining teaspoon of cinnamon, pecans and apples and pour it over the baking tray. Bake it for 35 minutes or until a toothpick comes clean. Enjoy it with your favourite coffee.
Notes
The recipe is without sour cream and you can substitute the apples for any other fruit like pears, peaches, etc.
