This simple tomato soup recipe is cozy if you are too lazy to cook a big dinner. You need simple ingredients you usually have at home for this easy recipe; it is an excellent way to hide some veggies from your little ones.

- 1 tablespoon of olive oil
- 1 chopped onion
- 1 teaspoon of minced garlic
- 1 carrots, peeled and chopped
- 3 celery sticks, chopped
- 1 tablespoon of tomato paste
- 2 cans of tomatoes
- 1 glass of red wine
- salt
- black pepper
- Optional: heavy cream
- decorate: parmesan cheese, fresh basil and/or bread croutons
Instructions
- Drizzle the olive oil on a large pot over medium-high heat. Fry the garlic, tomato paste, onions, celery and carrot for a few minutes to let them develop some flavour. I like to cook it until the vegetables are caramelised a little. Add the glass of wine and can tomatoes, and let it simmer for 10 minutes or until it reduces slightly. Season the soup with salt and pepper.
- With an immersion blender, blend the content to make a creamy soup with a velvety texture. If you think the soup is too thick, add a splash of water or some chicken or vegetable stock. Check the seasoning after that and serve the soup warm. Adding a little heavy cream or evaporated milk can make a creamier soup. Serve the hot soup with some bread and parmesan cheese. Garnish with some Italian seasoning like basil, oregano or thyme.
