Description
This recipe combines a fluffy chocolate cake with a caramelized filling and frosting full of pecans and coconut. Nobody will resist this mixture.

- 2/3 cup of baking chocolate (120 grams)
- 1/2 cup of water
- 2 1/4 cup flour
- 1 teaspoon Baking soda
- 1/2 teaspoon of salt
- 2 cups of sugar
- 1 cup of unsalted butter
- 4 eggs
- 1 teaspoon vanilla
- 1 cup cream
Filling:
- 3 egg yolks
- 1 cup of brown sugar
- 1/2 cup of unsalted butter
- 1 cup of evaporated milk
- 1 teaspoon vanilla
- 1 1/3 cup of shredded desiccated coconut
- 1 cup of pecans, chopped
Instructions
- Dissolve the chocolate with the water in a saucepan over medium heat until it becomes completely liquid. Let it cool before using.
- Preheat the oven at 180°C and grease two round cakes pan (20 cm), and put parchment paper on the bottom.
- Sift the dry ingredients: flour, baking soda and salt in a bowl and set aside for further use.
- In a stand mixer, beat the butter and sugar till it becomes creamy. Add the egg yolks one at a time with the vanilla. Incorporate the chocolate mixture completely cool. Add the flour mixture alternating with the cream. Always start and finish with the dry ingredients. Set aside.
- Egg Whites: With a clean beater and bowl, beat the egg whites until if form peaks. Add it to the cake mixture with folding movements.
- Pour the mixture over the two pans, trying to make them even. Bake them for 45-55 minutes or until a toothpick comes clean. Let them cool down for 20 minutes before releasing them for the pan.
- Filling: while the cake is in the oven, we need to prepare the frosting. Mix the yolks, sugar, butter, milk and vanilla in a saucepan. Cook the mixture over medium heat for 15 minutes. Turn off the heat and add the pecans and coconut. Layover a film over the mixture and let it cool down for 30 minutes before using it.
- To assembly, the cake put one of the cakes over a plate, spread half of the frosting over it, the next layer of cake, and end it with the other half of the topping. Enjoy it!
