This granny’s style apple pie is a simple recipe but with loads of memories in it. You will love how good your house will smell after this bake.

Dough:
- 1 1/4 cup of flour
- 3 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup of cold unsalted butter
- 1 egg yolk
- 1/4 cup of cold water
Filling:
- 7 apples
- 1/2 cup sultanas
- 4 1/2 tablespoon sugar
- 2 teaspoon cinnamon
- 1 tablespoon flour
flour for rolling
- 1 egg
- 1 drip of milk
Instructions
- Pate Brisee:In a food processor, put the flour and sugar. Cut the butter into small cubes, and with the machine, turn on, throw each cube and let it work till it appears like coarse sand. Mix the egg yolk and water in a bowl and pour little by little while the processor is still on. Stop when the dough turns into a ball; sometimes, you don’t need to use all the water depends on how moist is your flour. Separate the dough into two bags and refrigerate. Let it rest for at least 30 minutes before using.
- Filling:Meanwhile, peel and slice the apples thinly. Cook them in a microwave-proof bowl for 5 or 6 minutes until they are a little cooked. You need to do that to have a more smooth pie, but you can use them raw if you want a crispier finish. As soon as they come from the microwave, let them drain the water. Mix them with sugar, cinnamon, Sultanas and flour. Set aside.
- Assembly: Preheat the oven at 170°C and roll one divided dough for your base over a floured surface. Roll it until you achieve a 3mm thickness. Lay the dough over the pie mould. Use the egg white paint the base before putting the apples; it will prevent the base from turning soggy. Fill it with the apples and proceed to toll the second dough to put it over as a lid. You can do that and make a hole in the middle to let the steam go out and finish the borders, or you can do a lace finish by cutting strips of dough and lacing it.
- Bake: Mix the egg yolk with a splash of milk to turn it a little runnier and brush it to the pie surface. Bake the pie for 45 minutes or until it is golden brown.
