Ingredients

Units Scale
  • 3 potatoes
  • 1 egg yolk

  • 3/4 cup of flour
  • 1 teaspoon of salt

Instructions

  1. Preheat the oven at 180ºC. Pinch the potatoes with a fork to let the heat pass-thru. Bake the for 1 hour or until they are done.
  2. Peel the potatoes and mash them with a potato press. If you want a thinner consistency you have to go thru a strainer after you mash the potato.
  3. Mix the potatoes with the egg yolk, flour and salt. work with your hand to have a nice consistency that is not sticky in your hands. Flour the surface and roll the dough into 2 cm diameter logs. Cut 2 cm pieces and continue with all the log. Roll each piece into a ball and roll it over a floured fork to make some marks (that will help to stick the sauce into them) Let them rest in a baking tray with floured parchment paper. Continue with all the dough until you finish.
  4. to cook the gnocchi bring to boil a saucepan with water. As soon it begins to boil salt the water and pour all the gnocchi and cook them until they rise into the surface and strain the with a spoon and reserve.
  5. Serve them with your favourite sauce or just with some butter or olive oil and parmesan cheese. Sometimes the most simple dishes are the best.
