- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter melted
- 1 cup sugar
- 1 egg
- 1 egg yolk
- 2 tablespoon lime juice
- 2 teaspoon lime zest
- 1 teaspoon vanilla
- icing sugar
Instructions
- Sift all the dry ingredients (flour, baking soda and salt) in a medium bowl and set them aside.
- In a stand mixer with the paddle attachment at medium speed, mix the melted butter with the sugar until smooth. Add the egg and yolk one at a time and beating after each addition. Incorporate the lime juice, lime zest and vanilla to enhance that lime flavour. Finally, add the flour mixture and mix well. Let it rest in the refrigerator for at least 4 hours or overnight. I always do it the night before.
- Preheat the oven to 180°C and prepare two baking sheets with parchment paper or silicone liners.
- Use a small cookie scoop or something that you can use to pick more or less the same amount of cookie dough and form a ball that you will roll into icing sugar. Place the balls into the prepared pans and bake them for 10-12 minutes or until golden. Transfer the cookies to a cooling rack.
