For the Pastry:

  • 2 cups all-purpose flour
  • 200 grams cold unsalted butter, diced
  • 1/3 cup brown sugar
  • 1 egg yolk
  • 1 whole egg

For the Filling:

  • 4 ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon cornstarch
  • A splash of vanilla extract

For the Sprinkle:

  • 1 egg yolk
  • 2 tablespoons milk
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the oven and baking sheet: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Make the pastry: Combine the flour and brown sugar in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and whole egg, and mix until the dough comes together. Form a ball, wrap it in plastic wrap, and refrigerate for at least 15 minutes.
  3. Prepare the peaches: While the dough is chilling, combine the sliced peaches, sugar, cornstarch, and vanilla extract in a bowl. Toss to coat the peaches evenly.
  4. Assemble the galettes: Divide the dough into four equal parts. Roll out each part on a floured surface into a thick circle about 1/2 cm (1/4 inch). Place a quarter of the peach filling in the centre of each circle. Bring the edges of the dough up and over the filling, overlapping and pleating as you go. Leave a small opening in the centre to allow the filling to peek through.
  5. Prepare for baking: Place the galettes on the baking sheet. In a small bowl, whisk together the egg yolk and milk. Brush the mixture over the edges of the galettes. Sprinkle with sugar.
  6. Bake: Bake the galettes for 30-35 minutes or until the crust is golden brown and the filling is bubbly.
  7. Serve: Let the galettes cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.
