Description
Ice cream is one of my best desserts for those sunny days. I made one of my favourite combinations: a vanilla base with caramelised pecans and dark chocolate chips. The bitterness of the chocolate goes well with the sweetness of the caramel.
Ingredients

- 1 1/2 cup of whole milk
- 3/4 cup of sugar
- 1 teaspoon of vanilla
- 1/8 teaspoon of salt
- 3 egg yolks
- 2 cups of heavy cream
For the toppings:
- 1 cup of sugar
- 1/2 cup of pecans
- 3 tablespoons of water
- 1/2 cup of dark chocolate chip
Instructions
- To make the Pecan Praline: Add the sugar and water to a microwave-proof container. Mix well and clean the edges of any grain of sugar to prevent them from caramelising. Cook the mixture for 5 minutes in the microwave. Check the colour and add 30 seconds to each time. You have to do it carefully because it will turn to caramel in seconds. Add the pecans and pour them over a parchment paper. Let it cool down and cut it to the size you want into the ice cream.
- Mix in a saucepan the whole milk, sugar, vanilla and salt. You need to cook it until the sugar dissolve. Let it bring to simmer over medium heat while stirring the mixture.
- Meanwhile, beat the egg yolks in another bowl and add 1/3 of the warm milk to temper the mixture. Add the rest, mix well, pour over the saucepan, and cook it over medium heat. The mixture needs to cover the back of the spoon. Stir until it comes like a custard or reaches 175°F. Strain the mixture into a clean bowl. Add the heavy cream and refrigerate the mixture overnight.
- Pour the mixture into the ice cream maker and beat for 20 minutes. Add the pecans, praline and chocolate chips. Transfer to an airtight container and fridge for at least 4 hours.
