- 2 cups of all purpose flour
- 1 tablespoon of baking powder
- 1 teaspoon of cinnamon powder
- 1/4 teaspoon of salt
- 1 cup of yoghurt
- 2 eggs
- 2/3 of a cup of sugar
- 1/2 cup of unsalted butter melted
- 1 teaspoon of vanilla extract
- 1 1/2 cup of fresh blueberries
Instructions
- Heat oven at 180°C and prepare the muffin pan with paper liners.
- Sift together the dry ingredients: flour, baking powder, cinnamon powder and salt and set aside.
- In another large mixing bowl the melted butter and sugar (you can use brown sugar instead), incorporate the large eggs one by one, the cup of yoghurt and vanilla. You can mix it with a hand mixer or for an easy result use a stand mixer.
- Whisk the dry ingredients into the muffin batter. Mix it well to finally add the fresh blueberries. Scoop the batter with ice cream or cookie scoop to have an even measure among all the muffins. Fill the liners up to 3/4 of the cup.
- Bake the muffins for 17-20 minutes in the preheated oven or until a toothpick comes out clean.
- Cool the muffins in a cooling rack for 5-10 minutes before eating these homemade muffins. You can eat the cooled muffins with your favourite coffee or tea.
- You can reserve the rest in an airtight container to maintain moisture.
