Ingredients

  • 3 tablespoons mandarin juice
  • 1 tablespoon grated zest of mandarin orange
  • 3 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 13 tablespoons unsalted butter, softened

Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. Whisk together eggs, mandarin juice, zest, and vanilla extract in a bowl.
  3. Mix the dry ingredients (flour, sugar, baking powder, salt) in a separate bowl for 30 seconds.
  4. With the low-speed mixer, incorporate the softened butter in two batches, alternating with the wet ingredients. Mix until just combined; don’t overmix.
  5. Pour batter into the prepared loaf pan and bake for 35-40 minutes, or until a toothpick inserted in the centre comes clean.
  6. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
