If you follow me for a while, you will see that we are into the citrus flavours, so every time I see them, I try to think outside the box and look for different ways of using them. This version of key lime crinkle cookies is my favourite among the various kinds we try. The key lime juice gives It an extra kick. You can also do the same recipe with lemons instead of lime. And why not introduce it to the famous crinkles cookies?

Be aware that this recipe needs to rest for at least 4 hours, so keep that in mind. I always do it the night before or a couple of days before using. You can keep it in the refrigerator for 3 days in an airtight container, or otherwise, you can freeze it and let it at room temperature for 30 minutes before using it. 

So, if you are also a citrus lover, as we are, give it a try, and I guarantee you will not be disappointed.

Ingredients:

  • plain flour
  • baking soda
  • salt
  • unsalted butter
  • sugar
  • eggs
  • key lime juice
  • key lime zest
  • vanilla
  • confectioners’ sugar

The process is straightforward if you use a stand mixer with the paddle attachment or an electric mixer. You will beat the butter, sugar, eggs, vanilla, lime juice, and zest at a medium speed. When everything is well incorporated, you will add the dry ingredients. You will let the dough rest for at least 4 hours in the refrigerator, or you can do it the night before. That is what I usually do.

When the cookie dough has rested, you will make balls with a small cookie scoop and roll balls in powdered sugar to create that crinkle effect in the oven. Place cookies over prepared baking sheets and cook them for 10-12 minutes. Let them cool in a wire rack and enjoy them. 

You will have a cookie with the perfect kick of lime, crunchiness on the outside and moistness on the inside. The key lime crinkle cookies will be a perfect gift box.
