20 Mar Apple Coffee Cake with Crumble
Very easy recipe to satisfy your craving for something sweet to accompany your favourite coffee or tea.
Ingredients:
Cake:
100 grams of butter
1 cup brown sugar
1/2 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1 cup cream
1 teaspoon vanilla
2 cups chopped apple (peeled and cut into small cubes)
Crumble:
1/2 cup brown sugar
1/2 cup flour
1 teaspoon ground cinnamon
50 grams of butter
Glaze
1 cup icing sugar
1/2 teaspoon vanilla
3-4 tablespoon milk
Prep:
- Preheat the oven a 180ºC. Grease a rectangular baking dish. 28×20 cm.
- In a bowl cream together the butter and sugars. Add one by one the eggs and mix well. In other bowl sift together the dry ingredients: flour, baking soda and cinnamon. Add to the butter mixture alternating with the cream and vanilla. Start and finish with dry ingredients. Beat well after each addition. Fold the chopped apples into the preparation. Pour the mixture into the baking dish. Set aside.
- Prepare the crumble mixing the sugar, cinnamon, flour and butter with your hands or a fork until it becomes a coarse crumb. Sprinkle the crumbs over the cake and bake for 40 to 45 minutes or until is set and golden brown. Let it cool for at least 10 minutes.
- Meanwhile, prepare the icing. Sift the icing sugar in a bowl. Add the vanilla and a tablespoon of milk at a time until is a little runny. Drizzle the icing over the cake and serve it warm. Enjoy!
