Applesauce coffee cake

The applesauce coffee cake is a very moist and soft cake that would pair fantastically with a coffee or tea.

Ingredients:

1/2 cup butter

1 1/2 cup sugar

1 cup applesauce

2 eggs

2 cups flour

1 1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup raisins

1/2 cup chopped pecans

3 diced apples

Drizzle:

1 tablespoon butter

3 tablespoon sugar

1 teaspoon cinnamon

Prep:

  1. Preheat the oven at 180ºC. Grease a baking a 20x30cm cake pan. 
  2. Cream the butter and add the sugar little by little beating well after each addition. Incorporate the applesauce and eggs one by one. 
  3. In another bowl sift all the dry ingredients: flour, baking soda, salt, cinnamon and nutmeg. Add to the butter mixture. Incorporate to the mixture the raisins, pecans and diced apples. Pour the mixture into the baking tray.
  4. For the drizzle melt the butter in the microwave and mix with the sugar and cinnamon. Sprinkle over the baking tray and bake the cake for approximately 35-40 minutes or until a toothpick comes out clean. Let is cool down and enjoy with your favourite tea or coffee.
