Banana Bread with sultanas or plain banana bread is our family comfort dessert. Every time we have some ripe banana, we will do bread, cupcakes, or pancakes.
This recipe is straightforward; you have to add all the listed ingredients and mix it with a hand beater. For me is a perfect occasion to bake with my kid, who wants to be all hands over the batter.

- What can I do if I don’t have ripe bananas? You can add two more tablespoons of sugar to the batter. But a perfect trick is that every time you have ripe bananas, just smash them and freeze them in bags of one or two bananas. So, you only let them out of the fridge for a couple of hours and add to any recipe.
- Do I have to use buttermilk? Yes, is much better, but if you are in a rush and don’t have buttermilk, you can add the same amount of evaporated milk. I have done this before, and it is almost the same. (we don’t have buttermilk in Peru)

Description
Banana Bread with sultanas or plain banana bread is our family comfort dessert. Every time we have some ripe banana, we will do bread, cupcakes, or pancakes.
Ingredients
- 3/4 cup brown sugar
- 1/4 cup unsalted butter, at room temperature
- 1 egg
- 2 – 3 mashed bananas (approximately 3/4 of a cup)
- 1/4 cup buttermilk
- 1 1/4 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon powder cinnamon
- 1/8 teaspoon powder cloves
- 1/2 cup sultanas
Instructions
- Preheat the oven at 180°C and grease a loaf pan and add parchment paper to the bottom.
- Mixture: Beat the sugar and unsalted butter until it looks creamy. Add the mashed bananas, egg and buttermilk to the mix and incorporate them with the hand whisker. Finally, add all the dry ingredients: flour, baking powder, baking soda, salt, cinnamon and cloves. Beat well the mixture and incorporate the sultanas with a spoon. Pour the mixture into the prepared loaf pan.
- Bake, the banana bread for 50 minutes or until a toothpick comes out clean.
