I’m always on the hunt for new recipes that introduce some fruits or veggies inside so I can manage to give some to my toddler, so this Banana Muffin with Peanut Butter is the perfect option. Also is an easy recipe that you can cook with them. He always likes to help “mama” so is perfect to bond with your kids and introduce some counting and pouring to your play repertoire.
Ingredients:
1 1/2 cup of flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon powder
3 mashed bananas
6 tablespoon unsalted butter
1 cup of brown sugar
1 egg
1 tablespoon peanut butter
1 teaspoon vanilla
2 tablespoon milk
Prep:
- Preheat the oven at 180°C and prepare a muffin tray with liners.
- Mix the butter, sugar, vanilla, peanut butter, milk and egg. Incorporate the mashed bananas and finally, add the dry ingredients (flour, baking powder, baking soda, salt and cinnamon)
- Pour the mixture into the muffin liners, fill them only 3/4. Bake them for 20 to 25 minutes or until they are done and golden.
- Enjoy this banana muffin with peanut butter with a glass of milk or your favourite cup of tea or coffee.
