Caramel Raspberry Slice

caramel raspberry slice

I try this recipe with some frozen raspberries that I had, but you can do it with fresh ones or change it to other seasonal berries that you love. 

Ingredients:

Base

1 cup flour

1/2 cup sugar

1/2 cup oats

3/4 cup unsalted butter melted

Caramel:

1/2 cup unsalted butter

1/2 cup brown sugar

1 can of condensed milk

1 teaspoon vanilla

Topping:

350 grams of raspberries

3 tablespoon sugar

1/4 cup of water

1 1/2 tablespoon cornflour 

1 tablespoon water

Prep:

Base:

  1. Preheat the oven at 180ºC. Grease a rectangle baking tray and put some parchment paper to ease the removal of the slice. 
  2. Mix the melted butter with the sugar, flour and oats and press it to the bottom of the pan. 
  3. Bake for 15 minutes or until golden. 

Caramel:

  1. Meanwhile, the base is cooking prepare the caramel. 
  2. In a saucepan over medium heat pour the butter, sugar and vanilla. Keep moving till it begins to bubble. Add the condensed milk and cook for 5 minutes or until it thickens. Pour the mixture over the base and cook for 10 minutes in the oven and let it cool it down. 

Topping:

  1. In a saucepan over medium heat put the raspberries, sugar and water. 
  2. Meanwhile, dissolve the cornflour with the tablespoon of water. As soon the mixture begins bubbling pour the cornflour mixture and move constantly to prevent lumps. Let it simmer for a couple of minutes to thickens if you want it to be thicker you could add more dissolve cornflour and repeat the procedure. 
  3. Add the raspberry mixture to the caramel slice when it cools down and enjoy it.
