20 Aug Chicken with creamy mushroom sauce
I love this kind of dishes that I can do it in batches. Perfect for busy people, so with some minutes cooking, you can have food for a couple of days!
Ingredients:
2 chicken breasts
250 grams of mushrooms
1 tablespoon of chopped parsley
1 tablespoon of butter
1 teaspoon of minced garlic
1 teaspoon of dijon mustard
1/4 teaspoon of paprika
3/4 of a cup of heavy cream
Oil
Salt and Pepper
Prep:
- Cut the chicken breast into cubes. Salt and pepper them. Over medium heat, pours a tablespoon of oil on a saucepan and begin to fry seal the chicken cubes into batches. The idea is to gold the exterior and set aside. We will finish cooking later.
- In the same saucepan (with the chicken juices leftovers) melt the butter. Add the minced garlic and fry for 30 seconds. Add the mushrooms and cook them until they turn brown and salt and pepper them. Finally add the paprika, parsley, dijon mustard, cream and chicken. Let it simmer for 5-7 minutes or until the chicken is cooked. Serve with some steamed veggies, rice, baked potatoes or what you fancy that day and enjoy it!
