Coffee Chocolate Brownie Trifle with Berries
This Coffee Chocolate Brownie Trifle will be an excellent idea for you to bake for your Christmas dinner or lunch. I think it is a perfect ending, after all, we eat that day. So, as a self-declared sweet tooth, I need a dessert at the end of the day no matter how full I feel from early. This Coffee Chocolate Brownie, as decadent as it will sound, has some freshness at the end. I bake this brownie with dark chocolate and coffee, so you have your bitter and sweet and sour from the strawberries and cherries. Perfect to end the meal.
The other thing I love about trifles apart from the beauty of the colours is that you can make them in advance and have it on the fridge. So, you can bake the brownies the day after and assembly everything in the morning, so you have all the day to prepare the rest of your Christmas meal.

Description
A simple recipe for entertaining on this holiday, you will look like a pro baker.
Ingredients
- 180 grams of unsalted butter
- 1 1/2 cup dark chocolate (chip, melts)
- 1 cup sugar
- 1 cup brown sugar
- 3 eggs
- 3 teaspoon of instant coffee
- 1 1/2 teaspoon of vanilla
- 1 1/3 cup of flour
- 2/3 cup of cocoa
- 1/4 teaspoon of salt
- 600 ml of whipping cream
- 1/4 cup powdered sugar
- strawberries
- cherries
Instructions
- Preheat the oven at 180°C and prepare a rectangular pan with parchment paper. (33x 23 cm or 9X13 inches)
- Preparation: In a saucepan over medium heat, melt the dark chocolate and butter. Turn off the heat and pour the mixture into a bowl. Add the sugar and brown sugar. Incorporate the 3 eggs, one at a time and mix well after each addition. Mix in the vanilla and instant coffee. Finally, add the dry ingredients: flour, cocoa and salt. Beat well and pour the mixture into the prepared pan.
- Bake them for 20 -25 minutes until a toothpick comes with moist crumbles attached to it. Don’t wait till it comes clean because it will let the brownies dry. You want to achieve that fudgy sensation inside cook until it comes with some crumbs when you try the batch.
- Let it cool down for 15 minutes to cut them into little squares, and keep them in an airtight container if you make them the day before.
- Meanwhile, beat the whipped cream with the powdered sugar until it turns chantilly. You can add more sugar if you want it sweeter; it depends on taste. Set aside.
- Wash the cherries and strawberries and cut the strawberries into slices and the cherries in half, discarding the seed. Save some whole strawberries and cherries for the top layer.
- To assembly, just put a layer of brownies on the cup, top it with chantilly and berries, repeat until you finish your layers and put some whole fruits in the top layer instead of slice ones. Let it rest on the fridge until you serve it.
