If you love the sour flavours, this bar is for you. The combination of the shortbread base and the tanginess of the lime filling will be a very good dessert for an afternoon tea.
Ingredients:
Shortbread:
1/2 cup of melted salted butter
1 cup flour
1/3 cup of powdered sugar
1 teaspoon vanilla
Filling:
1 cup of sugar
1/2 cup lime juice
1 tablespoon lime zest
3 eggs
1/4 cup of flour
Prep:
- Preheat the oven at 180ºC. Prepare a baking tray with parchment paper.
- Mix all the shortbread ingredients: melted butter, flour, powdered sugar and vanilla. It will form a dough. Press the dough against the bottom of the tray and cook it for 15 to 20 minutes or until is golden brown.
- Meanwhile, whisk the filling ingredients: sugar, lime juice, lime zest, eggs and flour. As soon as the shortbread comes out of the oven pour the filling and bake for 20 minutes or until is done in the centre. Let it cool before cutting and sprinkle with some powdered sugar. We love to put them on the fridge to have a cool treat with our tea. We´ll hope you enjoy them
