23 Jul Loaded potato skins
A good appetizer for a BBQ, game night or some friends night out. We like them. We usually do them when we put chicken wings to the BBQ.
Ingredients:
3 potatoes
2 stricky bacon
150 grams or more of cheese
50 ml of sour cream
chives
melted butter
salt and pepper
Prep:
- Preheat the oven at 200ºC. Prepare a baking tray with parchment paper.
- Bake the potatoes for 1 hour.
- Cut the potatoes lengthwise in two sections if the potato is average, it is a big cut in three sections and discards the middle part. (I use this and also what I scoop for mashed potato). Scoop 70% of the potato.
- Brush the scooped part with the melted butter. Salt and pepper them. Broil the potatoes skins until they are golden, so you can have the crispy taste.
- Meanwhile, we are going to cook the bacon putting it in a dish between to towel paper and microwave for 3 minutes or until crispy. Cut it in tiny pieces.
- As soon as the potatoes are done loaded them with the cheese and bacon. The cheese will melt wit the remaining heat on the potatoes. Add a teaspoon of cream cheese to each skin and sprinkle with some chives. Enjoy them with your prefered drink.
