27 Nov Oatmeal Biscuits
An easy recipe to do with your kids or cherish your childhood memories of those afternoons smelling cooking with your parents or grandparents. Nothing could beat the smell of baked biscuits.
Ingredients:
3/4 cup of flour
1/2 teaspoon of cinnamon
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of unsalted butter
1/2 cup of brown sugar
1/4 cup of sugar
1 egg
1 teaspoon vanilla
1 1/2 cup oats
1/2 cup of raisins
Prep:
- Preheat the oven at 180ºC. Prepare two baking sheets with parchment paper or grease them with some butter.
- Sift all the dry ingredients together: flour, cinnamon, baking powder, baking soda and salt. Set aside.
- In a bowl, cream the butter with the brown sugar and sugar for a couple of minutes. Then add the egg and vanilla and continue beating. Add the dry ingredients with a spatula. When they are incorporated, add the oats and raisins. With a spoon form little balls and place them in the baking sheet, leave a space between them because they will spread a little while cooking. I cook 12 or 15 biscuits in each tray.
- You can bake to trays at a time, but you have to switch their position at the middle of the baking time. Bake the biscuit for approximately 12-15 minutes or until they are golden brown. Enjoy them with your favourite coffee, tea or milk.
