15 Mar Ollucos
We had a craving for a Peruvian dish, so we went to the store to look for some Peruvian ingredients and we found can of “Ollucos” in brine. This an Andean Tubercle that has a strange form, but is very good in flavour and is a very easy stew to do.
Ingredients:
2 cans of “Ollucos in brine”
250 grams eye fillet
1 onion
2 tomatoes
1 cup of steak stock
1 tablespoon tomato paste
1 teaspoon of minced garlic
1 tablespoon oil
salt and pepper
Prep:
- Open the cans and chop lengthwise the “Ollucos” and reserve. Chopped the onions and tomatoes in little cubes. Cut the fillet into cubes, season and reserve.
- Heat the oil in a saucepan and fry the steak and reserve.
- In the same oil of the steak sautee the onion, add the garlic. When the onion is a little translucent add the tomatoes and continue frying. Incorporate the tomato paste and the “Ollucos”, fry them a little to impregnate the aromas to the “Ollucos”. Add the steak stock and boil them for 10 minutes, season with salt and pepper and add the steak. Serve with some white rice and enjoy.
