28 Sep One pot Sweet Chicken Stew
If you are a lover of the sweet flavour, your and your family will love this version of chicken stew, and the bonus is that you cooked in one pot. The other thing that I love about it is that you can add it to your batch cooking menu because it freezes perfectly without altering the texture or flavour at all.
If you have some raisins, lovers, as I do at home, this will be a crowd pleaser for sure because it has raisins, prunes and dry apricots. This time I serve with some white rice, but it will be excellent with some grilled veggies, roast potatoes, etc.
This tomato-based stew will be a perfect option for dinner tonight.
Ingredients:
- Chicken tights with bones or chops
- olive oil
- Salt and black pepper
- chopped onions
- minced garlic
- tomato paste
- bay leaf
- tomato cans
- chicken stock
- Tawny or Oporto
- brown sugar
- carrots, cut into cubes
- peas
- raisins
- prunes
- dry peaches
First, clean the tights from the extra grease and season them with salt and pepper. We prefer to work with chicken thighs to have juicer meat, but you are more than welcome to work with chicken breasts or drumsticks.
Pour a drizzle of oil into a large pot over medium heat. As soon as it is hot, start frying the chicken until it is golden brown to seal the juices inside, for 2 minutes or less on each side. Set aside for further use.
In the same pot, fry the chopped onions, and fry for 1 minute before adding the minced garlic, tomato paste and laurel leaves. Season them with salt and pepper and fry for a couple of minutes to develop the flavours. Incorporate the tomato pieces from the cans and chicken broth. Season a little and add the tawny and chicken tights, let it simmer for a couple of minutes and turn down the temperature and cook the stew for 30 minutes at low temperature. Finally, add the carrot pieces, peas, raisins, prunes and peaches and cook for another 15 -25 minutes until the sauce has the texture you love it. You don’t add before because we don’t want to overcook the veggies and make a big smush sauce. You must try the stew and check the acidity at the end of the cooking time. If you taste it a little acid, add the brown sugar; otherwise, don’t. It will depend on how ripe the tomatoes are, so that is why it is an optional step.
Serve this delicious stew with rice, rissoni, baked potatoes or grilled veggies.

A hearty stew when you need some comfort food for your family. The best thing about this Sweet Chicken stew is that we only use one pot for cooking it, and the good thing about these kinds of stew recipes is that you can freeze the leftovers for a lazy night’s dinner.
Ingredients
- 6 Chicken tights with bones or chops
- 1 tablespoon oil
- Salt and black pepper
- 1 onion, chopped
- 1 teaspoon of minced garlic
- 1 tablespoon of tomato paste
- 1 bay leaf
- 2 cans of tomato pieces (400 grams)
- 2 cups of chicken stock
- 1/2 cup of Tawny or Oporto
- 1 tablespoon brown sugar
- 2 carrots, peeled and cut into cubes
- 1/2 cup of peas
- 1/2 cup of raisins
- 1/2 cup of prunes
- 1/2 cup of dry peaches
Instructions
- Clean the chicken thighs from the extra fat and season them with salt and pepper.
- Heat a drizzle of vegetable oil in a pot or large dutch oven over medium-high heat and fry the chicken for a couple of minutes to seal the juices inside. Set them aside. In the same oil, fry the chopped onions and minced garlic cloves. Fry them for 2 minutes, and add the tomato paste and bay leaf, let it cook for a minute to develop more flavours season them with salt and pepper to let all the juices out. Add the canned tomato pieces, chicken stock, Oporto (tawny) and cooked chicken. I cooked them for 30 minutes to develop a deep flavour. Incorporate the veggies (carrots and peas) and the dry fruits (raisins, prunes and peaches) and cook the savoury stew for another 20 minutes. Season the stew with salt and pepper and also a tablespoon of sugar if needed. Sometimes the cans of tomatoes are not ripe enough, and you get acidity.
- Serve the Chicken with rice, baked potato or grilled veggies. I’ll hope you enjoy this delicious meal.
Notes
You can incorporate some baby potatoes into the stew when you add the veggies, but I don’t recommend them if you freeze the stew.
