23 May Orange Pound Cake
This is a good recipe for a lunch bag treat or when you want an afternoon sweet. You could do it like the recipe if you have oranges or you could replace the orange juice for milk and omit the orange zest.
Ingredients:
3 eggs
3 tablespoon milk
1/4 cup orange juice
2 teaspoon orange zest
1 1/2 teaspoon vanilla
1 1/4 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
3/4 cup unsalted butter at room temperature
Prep:
- Preheat the oven at 180ºC. Spray a loaf pan and line the bottom with parchment paper. Also, spray the parchment paper.
- In a bowl whisk together the eggs, vanilla, milk, orange juice and orange zest. Set aside.
- In another bowl mix the dry ingredients: flour, baking powder, salt and sugar. Beat well. Cut the butter into pieces and add to the mixture. Incorporate half of the egg mixture and mix well in a low pace until all the mixture is moistened. Beat for a minute on medium speed. Add the remaining egg mixture by little and mix it well after each addition.
- Pour the batter into the loaf pan and smooth the cake top with a spatula. Cook it for 55-60 minutes or until a cake tester come clean from the centre.
- Cool the cake for 15 minutes and remove from the pan to cool completely. Sprinkle with some powder sugar. Enjoy it with a good cuppa.
