18 Jan Quick Side Dish: Holiday Rice – Peruvian Arabic Rice
This Holiday Rice or what in Peru we are known as Arabic Rice ” Arroz Arabe” is a typical dish among Christmas or New Eve tables, but I adore this rice that I make all year long because it is such a simple side dish full of flavour.
I love to pair this holiday rice with oven-roasted chicken or BBQ meat. Sometimes you have guests home for a BBQ, and you want to go for a different side dish other than salad or potatoes. This side dish will be a good option.
The little ones love it because it has sultanas and the pecans’ crunchiness, and fried angel hair. So, it will also be a good side dish for your quick dinner nights.

- curry powder
- sultanas

- Can I make it in advance? Yes, I usually prepare the white rice with water, garlic, salt. And also fried in butter the angel hair with the curry powder, and I mix it when I want to use it.

Description
This Holiday rice: Peruvian Arabic rice is a staple among any holiday table in Peru, but I love it so much that I make it to eat with BBQ meat or oven-roasted chicken during the year.
Ingredients
- 2 cups of rice
- 2 cups of water
- 1 teaspoon garlic powder
- salt
- 4 tablespoon of butter
- 1 1/2 tablespoon curry powder
- 100 grams of angel hair
- 1/2 cup of sultanas
- 1/2 cup of chopped pecans
Instructions
- Make the white rice: If you have a rice cooker, throw the rice, water, garlic powder and salt to taste. Otherwise, in a pot over medium heat, drizzle a little oil, pour the rice, salt and garlic, and fry for 1 minute, pour the water, and let it simmer and lower the temperature to the minimum until the water is consumed and the rice cooked.
- Curry Sauce: In a saucepan over medium heat, melt the butter and add the curry powder and crush the angel hair pasta so you will have 2 cm pieces. Fry them until they are golden brown.
- Mix the white rice with the curry sauce, sultanas and pecans. Check the salt and serve it with your favourite meat or veggie.
