06 Jun Quick Homemade Coleslaw (with food processor)
I love this quick method of making coleslaw. Since the food processor came into my life I try to use it every time I can. The food processor is the best for this recipe, you can nail this recipe in less than 5 minutes.
The dressing is super creamy because I use cream cheese instead of yoghurt or sour cream. Is a good option if you want to achieve a richer and ticker salad.
We normally make this salad when I do Fried chicken because we want to have this sensation of having KFC. For me, is the best marriage, to have the tanginess of the coleslaw and the crispiness of the chicken.

It is coleslaw made out of cabbage, carrots and onions. But in this recipe, I use a powder onion so you don’t have the punch of the raw onion when you eat it right after finishing the salad. You don’t have to wait a couple of hours to pickle.
You can keep it in an airtight container for 3-5 days in the fridge.
Yes, you can substitute the cream cheese with sour cream or yoghurt.

Description
We were craving for a KFC lunch, so we did some baked fried chicken and a superb coleslaw. We think it ends better than we expected. So try this salad that will be a good side dish to any fried dish because the tanginess will cut the greasy feeling.
Ingredients
- 4 cups of very thinly sliced cabbage
- 1 cup of shredded carrots
- 1 teaspoon of powder onion
- 2 tablespoons of sugar
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground pepper
- 1/4 cup of mayonnaise
- 1 1/2 tablespoon of milk
- 1 1/2 tablespoon of cream cheese
- 1 tablespoon of vinegar
Instructions
- Cut the cabbage very thinly, the key is to slice it into tiny pieces so you don´t feel the hard pieces. So you have to cut it several times with the knife. If you have a food processor you could do it very fast, otherwise your cutting board and knife. Also, grate the carrot and add to the cut cabbage or cut it thinly with the food processor too. Set aside.
- In a bowl mix the other ingredients (onion powder, sugar, salt, pepper, mayonnaise, milk, cream cheese and vinegar) to prepare the dressing. Mix well. Pour over the cabbage mixture and mix well to assure every piece is moist with the dressing. Let it rest for 30 minutes and enjoy it.
