17 Aug Quinoa Salad
I always struggle with cooking quinoa… every time that I had to try it became very smushy and gooey and we didn´t like the texture. But I decided to give a try for my toddler with a different way of cooking and finally I got it!! So good thing always needs to be shared, I´ll hope you can smash it too.
You can use the quinoa for another recipe but this simple salad turns very yummy.
Ingredients:
3/4 cup of quinoa
1 3/4 cup of water
salt
1 little brown onion
1 big tomato or two small ones
2 sprigs of chopped coriander
2 tablespoon of vinegar
3 tablespoon of oil
salt and pepper
Prep:
- You need to fo your quinoa ahead of time so it is cool to use it for the salad. Take that in consideration before beginning the recipe.
- You need to wash the quinoa several times until the water runs clear and reserve.
- In a pot pour the water and bring it to boil in medium heat. As soon it comes to boil turn the heat to low and pour the quinoa and some salt. Put the lid and let it cook for 15 minutes. Open the lid and check if the quinoa is al dente or you need to cook more. You could add more minutes if you want it, but I think the time is perfect. As soon the quinoa is cook just strain it and leave it on the strain to cool down. If you need to cool it faster you could rum some cold water. Set aside to cool.
- Meanwhile, you could cut the onion into little squares. Also, cut the tomato into square discarding the seeds. Mix the vinegar, oil, salt and pepper to create a vinaigrette. Add the onions and tomatoes to the vinaigrette and let it rest. I like to do it that with time so the onions get a little pickled.
- When you are ready to eat just mix the quinoa, the onions, tomatoes and the chopped coriander. Enjoy it!
