17 Jun Rockmelon and Cilantro Asian Salad
We love to have salads for lunch, but we always are looking to introduce some new flavours to it. I think we are trying more new flavour to expand our toddler taste for food, even if he is not so keen about it we think that if he is us enjoying another kind of foods he will eventually try them.
This mix of sweet and salty ingredients is so good, so we invite you to try it.
Ingredients:
1 lettuce
halve of a rockmelon
1 cucumber
1 brown onion
2 sprigs of cilantro
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
Prep:
- Cut the onion into thin slices and set aside. Also cut the cilantro into little pieces and set aside.
- Prepare the dressing by combining the fish sauce, soy sauce, rice vinegar and brown sugar. Add the onion slices and let it marinate for 15 minutes.
- Wash the lettuce and cut them in bite-size pieces, put them in the bottom of a serving bowl.
- Peeled the rockmelon and cut into cubes. Slice the cucumber into thin slices. Put both ingredients over the lettuce.
- Pour the dressing over the salad and sprinkle with the cilantro. Enjoy it and let us know what you think!
