12 Jan San Choy bow
This sort of Chinese taco is an easy and quick meal for the family, we love to do it now and then.
Ingredients:
2 baby gem lettuce
250 grams of minced pork
250 grams of minced meat
3 coriander sprigs
juice and zest of 1 lime
salt and pepper
oil
2 tablespoon of fish sauce
2 tablespoon of soy sauce
2 tablespoon sugar
1 red birdseye chilli
Sauce:
1 tablespoon of fish sauce
1 tablespoon of soy sauce
1 tablespoon sugar
1/2 red birdseye chilli
1 coriander sprig
Prep:
- Mince the coriander leaves and also deveined the chillies and chopped very thinly. Set aside.
- To prepare the sauce mix the fish sauce, soy sauce, sugar, minced chilli and chopped coriander. Set aside to use it to drizzle over the “taco”.
- Heat a wok in higher temperature. Meanwhile, mix the two types of meat and season them with salt and pepper, set aside. When the wok is hot enough, pour some oil and fry the two kinds of meat in batches so the fry properly without boiling. The idea is to fry the different types of meat until it goes golden brown and crispy. Set aside and continue frying until you finish with all the meats. Pour all the meat back in the wok and add the coriander, chilli, lime juice, lime zest, sugar, fish sauce and soy sauce. Mix it and try it to rectify the season to your taste.
- To assembly, just use one lettuce leave as a taco and fill it with the meat we just cook and drizzle with some of the sauce. Enjoy it.
