Therefore, I joined the trend and began to experiment with different options and landed in this recipe.

Description
The recipe is the perfect combination between the acidity of the lime and the crunchiness of the poppy seeds, and the best thing is that you can entertain your kids for a couple of minutes doing it with them.
Ingredients
3 cups flour
1 1/4 cup sugar
2 tablespoon poppy seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of evaporated milk
1 cup of plain yoghurt
2 tablespoon lime juice
2 tablespoons of lime zest
2 eggs
8 tablespoons of unsalted butter, melted and cooled
Instructions
- Prepare a muffin tray with paper linens and preheat the oven at 180°C fan-forced or 190°C on a regular range.
- Wet ingredients: Mix the evaporated milk, yoghurt, lime juice, lime zest, eggs and butter in a bowl. Reserve them to use later.
- Dry ingredients: Mix the flour, sugar, poppy seeds, baking powder, baking soda and salt in another bowl and set aside.
- Pour the wet ingredients over the dry ingredients and mix it well with a hand mixer.
- Bake them for 20-25 minutes or until a toothpick comes out clean.
Notes
You can replace the lime with lemon, orange or other citrus fruit.
