Description
The strawberry, goat cheese, and arugula (rocket) salad is the perfect side dish for your BBQ meats or to have by itself as a quick lunch.
Ingredients
- 300 grams of arugula or rocket leaves
- 150 grams of strawberries
- 75 grams of goat cheese
- 100 grams of pecans
- 3/4 cup of sugar
- 3 tablespoons of water
- 2 tablespoons of mustard
- 2 tablespoons of honey
- 2 tablespoons of vinegar
- 4 tablespoons of olive oil
- salt and pepper
Instructions
- Make the praline: In a microwave-safe measuring cup or bowl, pour the sugar and water, cook them on high for 4 minutes, and add 1 minute until it turns golden. It would be best if you did it one minute at a time because the cooking time will change in each microwave; I have tried several times, and it is always different. Mix the pecans with the caramel and drop the mixture on a parchment paper surface. Let it cool for 15 minutes until it is hard and cut into pieces. Set aside.
- Salad dressing: Mix mustard, honey, vinegar and olive oil and make an emulsion by beating well. Add salt and pepper as you like.
- Assemble the salad: Wash and slice the strawberries. Build the salad by putting a layer of arugula or rocket leaves, strawberries slices, and pieces of goat cheese and top it with the pecan praline. Drizzle with the salad dressing when you are ready to eat.
