01 Apr Sweet and Sour Chicken with Pineapple
I love the sweet and sour in the Asian cuisine and this recipe is no exception. If you have a little sweet tooth for your main dishes, this recipe is for you. You could store your leftovers for an additional dinner the next day or freeze it for another occasion.
Ingredients:
500 grams of chicken breast cut into cubes
2 tablespoon soy sauce
2 tablespoon white vinegar
2 tablespoon tomato sauce
1 tablespoon sugar
2 tablespoon sesame oil
1 tablespoon cornflour
1 teaspoon minced garlic
1 teaspoon grated ginger
1/2 cup water
150 grams of snow peas
1 can of pineapple pieces drained
Prep:
- Place the chicken cubes in a bowl and pour over the soy sauce. Let marinate for 15 minutes or more.
- In another small bowl mix the vinegar, sugar and tomato sauce. Set aside.
- Remove the chicken from the soy sauce and drain well. Add the soy sauce to the tomato sauce mixture from step 2.
- Toss the chicken with the cornflour. Cover well.
- Heat a wok with the sesame oil and stir-fry the chicken till they are golden. Set aside.
- Low the heat of the wok and fry the ginger and garlic. Add the water and bring to boil. Add the chicken, cover and boil for 15 minutes. Stir a couple of times to avoid the chicken to stick to the bottom.
- Add the snow peas, pineapple and sauce mixture. Cover and simmer for 15 minutes. Serve and enjoy with some rice.
