Zucchini Souffles
A very easy dish for zucchini lovers, just a few ingredients and you will have a decadent dish. Try it for a quick lunch or as a side dish for meat, both ways are delicious.
Ingredients:
1 teaspoon minced garlic
1 small onion chopped
1 big zucchini grated
1/2 cup of parmesan cheese
3 eggs
Olive oil
salt and pepper
Prep:
- Grease 4 ramekins (3/4 cup size) and preheat the oven at 175ºC.
- Prep your ingredients by chopping the onion and garlic. Set aside. Also grate the zucchini.
- In a pan over medium heat, pour a drizzle of olive oil, when it starts to sizzle pour the onions and garlic. Cook them until the onion is translucent. Add the grated zucchini and stir them well. Cook them for 12-15 minutes or until they are tender. Discard the excess of water if you have some and let it cool for 15 minutes.
- In a bowl beat the egg yolks with the cheese, some salt and pepper. Add the vegetables that we cook in the previous step. In another clean bowl pour the egg whites and beat it until they form soft peaks. Add the third of the egg whites to the egg yolks mixture to soften. Then add the remaining egg whites with folding movements. Pour the mixture into the ramekins.
- Bake the souffle for 30 minutes and serve them warm. Enjoy it!
