Ingredients:
1 chicken breast
200 grams of lettuce
50 grams of bean sprouts
2 mandarines
1/4 cup of cashews
oil
Salt and pepper
Dressing:
2 tablespoon rice vinegar
2 tablespoon honey
2 tablespoon mustard
Prep:
- Cut the chicken breast lengthwise, so you have an even spread piece. The idea is that the whole breast has the same thickness to cook evenly. Salt and pepper the chicken.
- Heat a pan in medium heat. Drizzle some oil and fry the piece evenly. Let it rest for 10 minutes while you prepare the salad.
- Peeled the mandarines and separates the segments. Set aside.
- In a bowl mix the lettuce, green sprouts, mandarines segments and cashews.
- Mix the three ingredients of the dressing and drizzle the salad with it and finally, cut the chicken in pieces and set over the salad to serve. Enjoy!
