
01 Nov Hidden Veggies Recipe: Chocolate Beetroot Cake
I’m always hunting to hide some veggies or fruits in my meals, so my son will have more vegetables in his diet. So every time I hear, read or try a recipe that you couldn’t imagine that veggies are hiding inside, I will try it and make my version with the things my family will love.
Since we arrived in Australia, we have been eating more beetroot than ever before. In Peru, we use the beetroot to add to a salad, which is probably it. But here, you have it on salads, sandwiches, toast, burgers, etc. You can buy it raw, already cooked, canned, etc. So it is effortless to add to your meals. If you want to open the bag and consume it, you don’t have to pass for all the mess and fuss to cook, peel, and cut.
So, when I tried this chocolate beetroot cake that seemed like a moist chocolate cake, I thought that was the best way to hide some veggies into a cake. So I began to try different styles of recipes until I got the one I liked. I opted to make a single layer cake and make a ganache on the side, so you can handle the simple cake to your kids (mess-free) and add the ganache as a topping to the adults serve or your kids they like it. Mine likes things plainer. Or, if you are lactose-intolerant, you can omit the ganache and have a dairy-free dessert.

It is a simple recipe; First, you need to grate the beetroot and let it sit over a strain to discard all the liquids.
Then you need to melt the chocolate with brown sugar, syrup and oil in a saucepan. Let it melt on medium heat. Add the beetroot, eggs, flour, cocoa, baking powder, salt, and vanilla to finish. Pour over a greased round pan with parchment paper on the bottom. Bake it in a preheated oven for 1 hour.

- Can I replace the beetroot with another veggie? You can change it with zucchini or carrots, but you will lose the rich colour that beetroot adds to the cake.
- Does the cake have a robust beetroot flavour? You will taste a difference between a regular chocolate cake and this one, but it is not a strong and overpowering beetroot flavour.
