This homemade German Chocolate Cake melts two of my favourite ingredients: coconut and chocolate, so I have to try to make my version of it. I think I have achieved a very moist chocolate cake with this sticky coconut frosting. 

Contrary to what I thought, the name of this cake was not because its origins were in Germany, no it was because a baker named German created a new type of baking chocolate for the company that he worked for. He made a recipe with that baking chocolate that was the German Chocolate Cake. Curious, right?

I love when I develop a new recipe because you can use it for multiple other recipes. After all, the cake could be a base for a devil’s cake, chocolate cake, etc. The same with frosting; you can use it for brownie or ice cream topping. You definitely will see it in future recipes for sure.

Overview on how to make homemade German Chocolate Cake Recipe

You have to be aware to melt the chocolate with the water beforehand because we need to cool it down before using it in the mixture. 

You will need to mix the butter and sugar till creamy and add the egg yolks and chocolate mixture. Incorporate the dry ingredients and finally beat the egg whites till peaks and add them to the chocolate mixture with soft movements to preserve as much of that egg whites. Bake it in two round cake moulds. 

Meanwhile, when you bake the cake, you should prepare the frosting to cool down almost at the same time as the cake you can assemble. 

For the frosting, you need to cook over medium heat in a saucepan the egg yolks, sugar, butter, and evaporated milk for 15 minutes and then add the pecans and coconut and let it cool for 30 minutes, laying a film over it to prevent the formation of a hard layer.

Description

This recipe combines a fluffy chocolate cake with a caramelized filling and frosting full of pecans and coconut. Nobody will resist this mixture.


Ingredients

Units Scale
  • 2/3 cup of baking chocolate (120 grams)
  • 1/2 cup of water
  • 2 1/4 cup flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon of salt
  • 2 cups of sugar
  • 1 cup of unsalted butter
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 cup cream

Filling:

  • 3 egg yolks
  • 1 cup of brown sugar
  • 1/2 cup of unsalted butter
  • 1 cup of evaporated milk
  • 1 teaspoon vanilla
  • 1 1/3 cup of shredded desiccated coconut
  • 1 cup of pecans, chopped

Instructions

  1. Dissolve the chocolate with the water in a saucepan over medium heat until it becomes completely liquid. Let it cool before using.
  2. Preheat the oven at 180°C and grease two round cakes pan (20 cm), and put parchment paper on the bottom.
  3. Sift the dry ingredients: flour, baking soda and salt in a bowl and set aside for further use.
  4. In a stand mixer, beat the butter and sugar till it becomes creamy. Add the egg yolks one at a time with the vanilla. Incorporate the chocolate mixture completely cool. Add the flour mixture alternating with the cream. Always start and finish with the dry ingredients. Set aside.
  5. Egg Whites: With a clean beater and bowl, beat the egg whites until if form peaks. Add it to the cake mixture with folding movements.
  6. Pour the mixture over the two pans, trying to make them even. Bake them for 45-55 minutes or until a toothpick comes clean. Let them cool down for 20 minutes before releasing them for the pan.
  7. Filling: while the cake is in the oven, we need to prepare the frosting. Mix the yolks, sugar, butter, milk and vanilla in a saucepan. Cook the mixture over medium heat for 15 minutes. Turn off the heat and add the pecans and coconut. Layover a film over the mixture and let it cool down for 30 minutes before using it.
  8. To assembly, the cake put one of the cakes over a plate, spread half of the frosting over it, the next layer of cake, and end it with the other half of the topping. Enjoy it!
