Chocolate Brownie muffin

If you love fudgy brownies, you will love this muffin recipe because it has the chocolate flavour with fudgy texture….the best combo ever. 

Ingredients:

1/2 cup of chocolate melts 

1/2 cup of unsalted butter

1/3 cup + 1 tablespoon of flour

1/3 cup of cocoa powder

1/8 teaspoon of salt

2 eggs

1 cup of sugar

1 teaspoon vanilla

Prep:

  1. Preheat the oven at 180ºC. Prepare a muffin tray with the paper wrappers.
  2. Melt the butter and chocolate melts in the microwave 30 seconds a time to prevent burning. Mix well. Set aside to cool a little. 
  3. Meanwhile, sift the flour, cocoa powder and salt in a bowl. Kep it aside for further use. 
  4. In another bowl whisk the eggs and sugar until the mixture is thick and pale. It will double the volume, more or less will be 5 minutes with an electric mixer. Add the chocolate mixture and vanilla. With a spatula incorporate the dry ingredients (flour, cocoa and salt) being careful of not overmixing it. 
  5. Pour the mixture into each muffin paper, fill them 3/4 of the muffin. Bake the muffins for 15 minutes or until a toothpick comes with moist crumbs not dry. Let it rest for 10 minutes and enjoy them!!
