13 May Chocolate chip muffins
These chocolate chip muffins are a quick recipe to indulge your family and friends. Try it and you would not regret it.
Ingredients:
2 cups of self-raising flour
2 teaspoon baking powder
3/4 cups of sugar
1/2 teaspoon salt
3/4 cup of milk
1/3 cup of oil
1 egg
1 teaspoon vanilla
3/4 cup of chocolate chips
1 tablespoon sugar and 1 tablespoon brown sugar to sprinkle the muffins
Prep:
- Preheat the oven at 190ºC. Prepare a muffin tray with muffin liners. Reserve for later use.
- Combine the wet ingredients (milk, oil, egg and vanilla).
- Add the dry ingredients (flour, baking powder, sugar and salt) to the wet mixture. Finally, incorporate the chocolate chips.
- Scoop the mixture into each muffin liner. Fill the cups 2/3 full. Sprinkle each muffin with a mixture of 1 tablespoon sugar and 1 tablespoon brown sugar.
- Cook the muffins for 20-25 minutes or until a toothpick comes clean from the centre of the muffins. Cool them for a couple of minutes before you remove them of the tray. Enjoy them with your favourite tea or coffee or serve them as a dessert peeling the linen off and adding a scoop of ice cream with some chocolate sauce.
