14 Apr Coconut and hazelnut kisses
A simple and quick recipe for those coconut lovers out there. You can change the hazelnuts for other nuts that you fancy better, but I can assure you that this is a killer combo.
Ingredients:
3 egg whites
3/4 cup of sugar
1/4 teaspoon cream of tartar
2 cups of Corn Flakes
3/4 cup of shredded coconut
1/4 cup of chopped hazelnuts
Prep:
1. Preheat the oven at 180°C and prepare two baking trays with parchment paper.
2. Beat the egg whites with the cream of tartar with an electric mixer. Beat until they are fluffy and begin to add the sugar 1 spoon at a time. Beat the mixture until it becomes a stiff meringue and the sugar is dissolved from the beating.
3. Add the corn flakes, coconut and hazelnuts with a spatula. Integrate them well. With a spoon pour each ball into the baking tray. Make sure you live at least 1 cm into each other to have space to grow a little and cook evenly. Bake them for 18 minutes or until the bottom is lightly golden, switching the trays in the middle of the baking so they are evenly baked.
Enjoy them with a nice cup of tea or coffee.
