Homemade apple coffee cake: easy recipe with apple halves

I love this homemade apple coffee cake because it is a quick option when you need something sweet for your afternoon tea. It is perfect because the sponge cake surrounds the crispier cooked apple. That is why instead of cutting the apples into squares, I like to cut the apples in half, remove the seeds and stem and slice the apples without touching the bottom. 

Even though I have other coffee cake recipes in my blog, this was perfect for fresh apples. The weekend before, we went to pick some apples with our family at a farm because is apple season. Ingredients:

  • flour
  • baking powder
  • salt
  • unsalted butter (softened)
  • sugar
  • vanilla
  • egg
  • milk
  • apples
  • sugar
  • ground cinnamon

You must grease a rectangular pan ( 9 by 13-inch pan) with canola oil cooking spray or melted butter. I prefer to do it in a rectangular pan, but you are welcome to do it in a springform pan. 

Preheat the oven to 180°C or 350°F. Sift the dry ingredients (flour, baking powder and salt) in a medium bowl. Mix the softened butter and sugar in a large bowl until they are creamy. Add the wet ingredients: Egg, vanilla and milk to the mixture. Add the cake batter to the prepared baking pan. Meanwhile, peel the apples, cut them in half and discard the seeds and stems. Using a sharp knife, cut the apple half into slices without cutting to the end. This will help the apple to absorb all the sugar and cinnamon. Place the twelve halves into the baking pan, 4 rows of 3 apples. Then sprinkle them with the sugar (1/3 of a cup) and cinnamon. The baking time is 25-30 minutes or until a toothpick comes out clean and the dough is golden brown. Let it cool down on a wire rack for 15 minutes before cutting it. You can serve it with a scoop of vanilla ice cream.

You can use pink ladies, Granny Smith, red apples or tart apples. 

Can I bake it with anticipation?

Yes, you can bake it the night before and wrap it with plastic wrap.

What else can I use to flavour the cake?

You can do a mixture of vanilla and lemon juice or lemon zest. 

Can I substitute the sugar? 

Yes, you can use brown sugar instead, but it will add a more caramelised flavour.

Yes, you can use apple cider or any other juice if you don’t like milk. 

How to bake it? 

You will bake it for 25-30 minutes, but if you don’t like the golden brown colour it takes, you can cook it for the first 20 minutes with an aluminium foil over it.

  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter (softened)
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2/3 cup of milk
  • 6 apples
  • 1/3 cup sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 180°C or 350°F. Prepare a rectangular pan with cooking spray.
  2. Peeled the apples and cut them in half. Discard the seeds and stem. Then, with a sharp knife, cut slices into the apple half without touching the bottom part. Reserve them.
  3. Sift all the dry ingredients in a small bowl: flour, baking powder and salt.
  4.  In a stand mixer or a bowl with an electric mixer, beat the softened butter and sugar until creamy. Add the vanilla extract and egg. Beat it well, and finally, add the milk and the flour mixture. Pour batter into the prepared pan. Accommodate the 12 apple halves into 4 rows by 3 apples.
  5. Mix 1/3 of a cup of sugar with the ground cinnamon. Sprinkle the cinnamon sugar over the apples.
  6. Bake the coffee cake for approximately 25-30 minutes or until a cake tester comes out clean. Let it cool down before serving.
