Best Fresh Homemade Strawberry Ice Cream Recipe

This is a perfect recipe if you love to do homemade ice cream with some fresh berries. I like adding fresh fruit to my ice cream because I feel I add value to my toddler’s diet. He loves ice cream, so for me is the best way to introduce some fruits that he would not eat whole. My husband and I love berries, but we don’t know why he doesn’t. Maybe in the future, he will.

For this recipe, I use my basic ice cream base and add the fresh strawberry flavour, so you are free to change it to another berry with no problem. This time I used strawberries because it is still strawberry season here, so we went to pick up some fresh ones.

Ingredients:

  • Whole milk
  • Sugar
  • Vanilla Extract
  • salt
  • Egg yolks
  • Heavy cream
  • Fresh Strawberries

First, wash the strawberries, discard the leaves, and make a fresh strawberry puree with heavy creams in a blender. If you don’t have a blender, you can use a potato masher to make the puree. Pour the mixture into a bowl and add the egg yolks; whisk well to break the eggs. In a saucepan, pour the milk, sugar, vanilla bean extract and salt over medium heat. Let it warm till the sugar is dissolved, but don’t let it simmer. If that happens, please turn off the heat and let it cool until the mixture is warm. Pour a third of the mixture into the strawberry mix to temper the eggs and stop the yolks from cooking. Pour the rest of the milk into the strawberry mixture, put it back in the saucepan, and cook until it thickens. Use a wooden spatula to prevent the mixture from sticking to the bottom. Cook it for 15-20 minutes until it thickens. If you see the back of a spoon, you can make a line with your finger, and it will remain. Let it cool down in another bowl and cover it with plastic wrap. Let it cool down in the refrigerator.

Meanwhile, freeze the ice cream machine for at least 4 hours. After this 4 hours of assembly of the device per the manufacturer’s instructions, pour the ice cream mixture into it. Beat the mixture for 20 minutes. This step will help to prevent ice crystals from forming. Pour the mixture into an airtight, freezer-proof container, or use a loaf pan and cover the ice cream with parchment paper.

Yes, you can do it without a machine; for the machining process, you can use an Invert Marie Bathe, where you put a medium bowl over a large bowl filled with cold water and ice cubes. You could mix the ice cream mixture with a hand or electric hand mixer.

Can I Use frozen berries?

I prefer fresh ones, so you don’t add water to the mixture.

Ingredients

  • 1 1/2 cups Whole milk
  • 1 cup of Sugar
  • 1 teaspoon of Vanilla Extract
  • pinch of salt
  • 3 Egg yolks
  • 2 cups of Heavy cream
  • 500 grams of Fresh Strawberries

Instructions

  1. Washed and cut the leaves of the fresh strawberries. Blend them with heavy cream. Pour the mixture into a mixing bowl and add the egg yolks. Beat them well to break the yolks. Set aside for later.
  2. Pour the milk, sugar, vanilla, and salt into a large saucepan. Let it warm, and melt the sugar over medium-low heat. Don’t let the mixture simmer. Pour a third of the hot milk over the egg mixture and mix well to heat the fruit mixture. Pour the rest of the milk and return it to the saucepan. Cook it for 15-20 minutes, mixing it with a wooden spoon. Until it covers the back of the spoon, you can make a line with your finger, and it stays perfect.
  3. Cool it in a bowl over the refrigerator and freeze the ice cream machine for at least 4 hours. Assemble the ice cream machine as instructed and pour the mixture over and mix it for 20 minutes. Pour the ice cream mixture into a freezer-safe container or a loaf pan covered with parchment paper. Let it freeze overnight.
  4. Serve your creamy ice cream in a cup with fresh strawberries, a dollop of heavy whipping cream, or strawberry sauce. Or you can eat it as an ice cream cone.

Notes

If you want a reddish colour, add some food coloring. But I like the pink colour.
