30 Jun Lemon Pound Cake
We love to always have some sweet treat for our afternoon tea or coffee and this pound cake is absolutely perfect for that. Leté hope you like it and try it soon.
Ingredients:
1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup of butter
1 cup of sugar
3 eggs
1/4 cup yoghurt
3 tablespoon lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla
Prep:
- Preheat the oven at 180ºC. Grease a loaf pan (21.5cm)
- Sift the flour, baking powder and salt in a bowl and set aside.
- In another bowl beat the butter for 1 minute or until creamy. Add the sugar and beat for another 2 minutes or until it becomes a creamy texture. Add the eggs one at a time and scrape the bowl after each addition. Add the yogurt, lemon juice, lemon zest and vanilla until combine.
- Finally, add the dry ingredients that you sift in step 2 with folding movements. When everything is combined pour into the loaf pan and bake for 50 minutes or until a toothpick comes clean from the centre.
