Lime curd

Lime curd

It is the easiest way of doing a foolproof lime curd. We found this recipe and perfect it to our taste. We love tangy things, so having some lime curd in our fridge is a must. So, we encourage you to try it and let us know what you think about it.

Ingredients:

3 egg yolks

2 eggs

1 cup of sugar

the juice of 4 limes

the zest of 4 limes

1/2 cup of melted unsalted butter

Prep:

Mix all the ingredients well and put them on a microwave-proof container. Cook in the microwave for 5 minutes, but stop every minute and mix well scrapping all the borders. It will thicken every minute. So check the consistency, because every microwave have different power so could be a little less or more.

Let it rest and keep in a refrigerated container. Enjoy it with meringues, biscuits or just by itself.
