25 Nov Onion Soup
This soup is a classic for those rainy days when all that you want is a cozy blanket and some all good comfort food to watch your favourite movie on streaming. Is a simple recipe but full of flavour.
Ingredients:
2 tablespoon butter
1 tablespoon olive oil
4 brown onions
1 litre of meat stock
4 bread pieces
4 pieces of gouda cheese or some cheese that will melt well
parmesan cheese
salt and pepper
Prep:
- Cut the onion in half and then lengthwise into thin strips. (julienne cut). Set aside. Also, toast the bread pieces to prevent them to soak into the soup.
- In a pot over medium heat melt the butter with the olive oil. Saute the onions for approximately 5 minutes or until they are translucent. Season them with salt and pepper. Add the meat stock. Let it cook for 15 minutes, so it concentrates a little.
- For the next step, you will need some soup plates that could go to the oven for a few minutes to grill. Put the toasted bread in the bottom with a slice of cheese over. Pour the soup over and top with a layer for parmesan cheese. Grill in the oven for 4 minutes or until the cheese is melted and golden. Enjoy it!
