14 Mar Pear & Cranberry Muffin
If you are craving a sweet treat and want to do something quick and easy just try this recipe. As usual, I have my toddler as a sous chef, so is a friendly recipe to do with your kids.
Ingredients:
2 cups of flour
2 teaspoon of baking powder
1/2 cup of brown sugar
1 teaspoon cinnamon
2 eggs
1 cup cream
1/3 cup oil
1 teaspoon vanilla
1 cup pear peeled and cut into little cubes
1/2 cup of cranberry
Prep:
- Preheat the oven to 180 C. Prepare a muffin tin with paper cups.
- Sift together the flour, baking powder and cinnamon. Set aside.
- Beat oil and brown sugar. Add the eggs one at a time and vanilla. Add a third of the dry ingredients, beat well and add half of the cream. Repeat one more time and end with the rest of the flour.
- Finally, add the pear cubes and cranberries. Folded well and pour the mix into the paper cubs. Fill them till 3/4 of the cup. Bake them for 20 minutes or until a toothpick comes clean. Enjoy with a cuppa.
