Pear & Cranberry Muffin

If you are craving a sweet treat and want to do something quick and easy just try this recipe. As usual, I have my toddler as a sous chef, so is a friendly recipe to do with your kids. 

Ingredients:

2 cups of flour

2 teaspoon of baking powder

1/2 cup of brown sugar

1 teaspoon cinnamon

2 eggs

1 cup cream

1/3 cup oil

1 teaspoon vanilla

1 cup pear peeled and cut into little cubes

1/2 cup of cranberry 

Prep:

  1. Preheat the oven to 180 C. Prepare a muffin tin with paper cups. 
  2. Sift together the flour, baking powder and cinnamon. Set aside. 
  3. Beat oil and brown sugar. Add the eggs one at a time and vanilla. Add a third of the dry ingredients, beat well and add half of the cream. Repeat one more time and end with the rest of the flour. 
  4. Finally, add the pear cubes and cranberries. Folded well and pour the mix into the paper cubs. Fill them till 3/4 of the cup. Bake them for 20 minutes or until a toothpick comes clean. Enjoy with a cuppa.
