06 Aug Rocky Road Bars
The rocky road bars are for our sweet tooth followers. This is the kind of recipe that will be a crowd-pleaser if they are into chocolate. So try it and let us know what you think.
Ingredients:
2 cups of mini marshmallows (big cut into pieces)
1 1/2 cup of chocolate chips
3/4 cup of nuts
3/4 cup of unsalted butter
1 1/2 cup of sugar
3 eggs
1 1/2 teaspoon vanilla
3/4 cup of flour
1/2 cup of cocoa
3/4 teaspoon baking powder
3/4 teaspoon salt
Prep:
- Preheat the oven at 180ºC. Prepare a rectangle baking tray with parchment paper.
- In a bowl mix the marshmallows, chocolate chips and nuts and sprinkle. Set aside for later.
- Melt the butter in the microwave or a saucepan over low heat. Pour the melted butter into a bowl. Add the sugar, eggs and vanilla and mix well.
- Sift the dry ingredients: flour, cocoa, baking powder and salt in a bowl. Add the dry ingredient to the butter mixture. Pour the mixture over the baking tray and spread evenly.
- Bake the mixture for 22 minutes. Take it out of the oven and sprinkle with the mixture of step 2 (marshmallow, chocolate chips and nuts) Bake the tray for another 5 minutes or until the marshmallow are golden and a little puff.
- Let it rest and cool completely before serving. You can use a wet knife to cut the piece to help with the stickiness of the marshmallows. Enjoy!
